Ch-Ch-Chia! Remember in the 90’s when we use to grow chia seeds into chia pets? Fast forward a few decades and now we are eating it and enjoying all the health benefits! Did you know chia seeds are loaded with nutrients with little calories? They are also high in antioxidants and they make a great breakfast, snack or even dessert that you won’t feel guilty eating. (Its a win win situation!)
If you haven’t heard about Real Layers, listen up! I am a huge fan of them (they are a Gourmet Buttercream Frosting company based out of Ontario. You can read all about them here in my recent blog post.) Their buttercream frostings are super delicious, easy to use and most importantly, it is made with REAL ingredients!
I have teamed up with Real Layers to create a simple recipe that you can impress your loved ones this Valentine’s Day. Let me introduce to you, the Real Layers Chia Pudding. The best part is you can make this recipe ahead of time and just assemble it in the morning for that perfect breakfast in bed on V-day!
Ingredients:
- 1/4 cup chia seeds
- 1 cup milk of your choice (I used almond milk)
- 1 cup Frozen or fresh mango chunks
- 1/4 cup Real Layers Vanilla Buttercream Frosting
- 2 tablespoons Raspberry puree (just put raspberries into a blender and blend until smooth)
- 1 teaspoon spirulina powder (you can get this at your local health food stores)
The last two ingredients are optional if you want to create the different colours.
For the hearts:
- 1/2 cup raspberry puree
- 1/4 cup Real Layers Vanilla Buttercream Frosting
Directions:
- Split the 1/4 cup of chia seeds into 3 small containers/jars
- Split the milk into these 3 containers and stir to combine
- In one container/jar add the raspberry puree, in another container/jar add the spirulina and the last container you can leave with just the milk. (stir to combine in each container, put the lids on and put in the fridge for at least 2 hours or overnight)
- In a food processor, add mangoes and Real Layers Vanilla Buttercream Frosting and blend until smooth (store this in the fridge until you are ready to assemble)
- When you are ready to assemble, use shorter classes or mason jars and layer the different flavours of chia puddings with the mango mixture. (Be creative and use different colour combinations)
For the hearts:
- Combine the raspberry puree and Real Layers Vanilla Buttercream frosting in a food processor and blend until smooth
- Pour about 1/4 inch into heart shape moulds and freeze until solid
- Decorate the chia pudding cups with one heart each
You can make a number of varieties depending on what fruits you have. Instead of raspberries and mangoes, this recipe works well with blueberries, kiwis, and pretty much any colourful fruits!
