Matcha Crepe Cake

- 1 1/2 cup skim milk, warmed
- 1 Tbsp Rishi Sweet Matcha
- 1 Tbsp Rishi Barista Matcha, sifted
- 4 large eggs
- 1/4 cup unsalted butter, melted
- 1 cup all-purpose flour
- 1 cup Raspberries and Blackberries (Optional for decoration)
- Dusting of matcha powder (optional for decoration)
- 1 Tbsp unsalted butter (for cooking crepe)
- 1 cup raspberries and blackberries (optional garnish)
- dusting of Rishi Barista Matcha (optional garnish)
For Cream Filling
- 1 pkg cream cheese (8 ounces)
- 1 tsp Rishi Sweet Matcha
- 1/4 cup skim milk
Crepe Batter Procedure
In a large bowl or blender, mix together milk, sugar and matcha.
Whisk as needed to remove any clumps.
To the milk mixture, add eggs, butter, and flour. Mix thoroughly to form a thin crepe batter. Set aside.
Heat a cast iron or nonstick pan over medium-low heat.
Use one tablespoon butter to coat the bottom of the pan and pour 2 ounces of crepe batter into the pan. Swirl pan around to form a thin circle. Cook for about 1 minute on one side then flip and cook for an additional 20 seconds (or until batter is fully cooked)
Repeat step 4 until all crepes are cooked. Let crepes cool on a large baking sheet for at least 1 hour.
