Shrimp Scampi

Did you know I worked at Red Lobster for many years as a restaurant manager? Back when I worked there, I see hundreds of shrimp scampi being made and quite frankly, I didn’t want to even eat one! But I haven’t stepped foot into Red Lobster for quite some time and my cravings for seafood definitely came back.  Shrimp scampi is essentially cooking shrimp with butter, wine and garlic (and a little bit of herbs). It is a super simple but very delicious recipe. Shrimp also cooks really fast so you can make a tasty meal very quickly. Most often, shrimp scampi is served over pasta but you can also serve over rice, quinoa or just on its own.

Shrimp scampi is actually such a popular dish that in the US, they have a Shrimp Scampi day. Mark your calendar on April 29 to eat all the shrimp scampi your stomach can handle! They have a day for everything now!

Easy & Tasty Shrimp Scampi

Ingredients
  

  • 1 lb large shrimp (if you get shrimp with shell on, just remove the shells and the vein in the back)
  • 3 tablespoons butter
  • 4 cloves garlic peeled and finely chopped
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1/4 cup Dry white wine (Sauvignon Blanc works really well)
  • 2 tablespoons chopped fresh parsley optional - you can use dried herbs like parsley, oregano as well

Instructions
 

  • In a large cast iron skillet, heat to medium heat
  • While the pan is heating up, peel and de-vein the shrimp
  • Once the pan is heated up, put butter into the pan with the garlic
  • Saute the garlic for about a minute and add shrimp (keep an eye on it, the shrimp cooks very fast)
  • Flip the shrimp after the first side turns pink (should only take about a minute)
  • Once all the shrimp are flipped, season with salt, pepper and add wine
  • Let the wine cook out and evaporate for about 2 minutes
  • Serve over pasta, rice, or eat on its own! Sprinkle parsley on top as a garnish if you wish!
