Easy Instant Pot Chili

I don’t know about you, but I never remember to soak my beans overnight! But to make a good chili, you just have to have some beans in it! I created this recipe so you don’t need to soak your beans AND you don’t have to slave over the stove for hours! Can we say win, win?




I am showing you the vegetarian version here, but if you like to add meat in it, it is the exact same recipe, but use the saute mode on your Instant pot at first and start off browning some ground beef until the beef gets a nice brown colour.  Once the beef is turning brown, follow the steps below and add about 1 cup of water.

You can adjust the heat to this dish by adding more or less spice and you can even add fresh peppers like ghost peppers if you really want some heat!  This chili also freezes really well and makes for a perfect comfort meal as we brace for the upcoming winter months! Easy Instant Pot Chili (Bonus: You Don't Need To Soak The Beans)

Ingredients
  

  • 3 cups your favourite beans you can use kidney, black, pinto, navy, whatever you like and have!)
  • 1 can crushed tomatoes
  • 1 can tomato paste
  • 1 white onion chopped
  • 2 cups your favourite stock
  • 1 tbsp dried orgeano
  • 1 tsp chili pepper (add more or less depending on how much heat you like)
  • 1 tsp chili flakes (add more or less depending on how much heat you like)
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp paprika
  • 1 tsp cumin
  • 5 cloves garlic (you can put more or less depending on how much you love garlic)
  • 1 cup shredded marble cheese (optional to top your chili)

Instructions
 

  • Throw all ingredients into instant pot, except for the cheese
  • Put lid on, seal and press the "Beans/chili" setting on your instant pot and set to 20 minutes
  • Once the timer goes off, you can do a quick release
  • Serve chili with a pinch of cheese on top!
