Remember when we used to grow chia seeds in those funky terra cotta pots with different characters? (Chi Chi Chia!) Fast forward a couple of decades later and we are now consuming this amazing seed! The chia seed is actually very good for you. It is high in fiber, protein, antioxidant and low in calories! They are a great food to have in the new year when we get back into our healthy eating and routines after weeks of holiday indulges! Since it is full of fiber and protein, it will keep you full for hours! And best of all, there are so many applications for consuming chia seeds. You can consume it raw by adding it into your salads, yogurt (really the list is endless for the dishes you can put chia in) or you can soak it overnight and make the most amazing chia pudding.
Often times we grab unhealthy options because it is easy and readily available, we opt for the quick fast food breakfast on the way to work since we don’t have to spend time cooking it. But this chia pudding recipe will solve that problem! You can make this ahead of time and keep it in jars in your fridge. In the morning, you can easily grab one to munch on for breakfast or take it with you to work to enjoy later.
Chia seeds don’t really have a strong taste which is really great to customize your pudding. You can add everything from cocoa powder to matcha powder to give it a different taste. You can add a little agave, honey or maple syrup for an added sweetness if you like. You can also just make it plain and add different fruits to change it up! When you make chia pudding, you can add any type of milk, so if you are vegan, you can use almond, oat, cashew or any of your favourite milk alternatives.
My favourite is a regular chia pudding topped with fresh strawberries and a little bit of chocolate shaving! I love chocolate and I find this way I can get a taste of chocolate to satisfy my craving without inhaling a full chocolate bar!

Easy & Healthy Chia Seed Pudding
Ingredients
- 1 1/2 cup milk of your choice
- 1/2 cup chia seeds
- fresh strawberries (or your fav fruits)
- chocolate shaving (Optional)
- 1 tsp agave, honey or syrup (Optional)
Instructions
- Split up chia seeds into 4 small mason jars
- Split up milk into the 4 mason jars on top of the chia seeds and stir. (Add agave, honey or syrup at this point if you want to sweeten it up)
- Close the mason jars and refrigerate at least 6 hours or overnight
- In the morning, cut a few strawberries and top chia pudding. Add chocolate shaving if you like.
